1 cup shredded mozzarella cheese
1 cup shredded parmesan cheese
1 tsp chopped garlic (add more to taste)
1 tsp salt (add more to taste)
1 tsp pepper (add more to taste)
2-3 slices of fresh mozzarella

tortilla chips, crackers or toasted bread

Preheat oven to 350°. While oven is preheating, drain the artichoke water and place artichokes in a big mixing bowl, chop the artichokes up a bit, if they are too big. Next, add the fresh chopped baby spinach to the bowl; stir. Add garlic, salt, and pepper. Pour 1/4 c of half n half to the mixing bowl; stir. Spray a deep oven pan with non-stick oil. Empty contents into the pan evenly, press with a spoon until flat and even. Add the cut up fresh mozzarella to the top and sprinkle a tad of shredded Parmesan on top.

Bake in the oven for 45 minutes or until a little golden brown forms on top.

Take out of the oven and serve it with tortilla chips, crackers, toasted bread or your choice.
