A couple years ago, I was craving Cheddar Broccoli Soup from Panera Bread/St. Louis Bread Co., so I decided to find a copy cat recipe. Sure, the copy cat recipe was great! Unfortunately, wasn’t great enough for my palate.
Here is my own recipe, main ingredients of the copy cat, but added my touch to it. It’s amazing! You will not be disappointed!
Butter (tablespoon)
coconut oil (tablespoon)
garlic (tablespoon)
vegetable stock 1 1/2 boxes of stock
broccoli (2 steam bags)
sharp cheddar cheese (4 cups)
Matchstick Carrots (1 1/2 bags or you can cut them yourself)
1/2 of a big sweet onion (cut how ever you like)
whipping cream (one quart)
salt/pepper to taste

First things first, add a tablespoon of coconut oil to your skillet along with a tablespoon of garlic. Let the garlic brown up a bit, while your cutting up the onion. Add the onion, stir, then add the carrots. Stir together, add a pinch of salt and pepper along with 1/2 cup of the vegetable stock. Stir and cover on medium heat. Pop the broccoli into the microwave and cook by the directions of the package (cook both packages separately). While the broccoli is cooking, add a tablespoon of butter to your big pot, melt it down. Add the rest of the vegetable stock to the big pot along with 1/2 of the other stock. Bring to a boil. By this time one bag of broccoli should be done, add that bag to the onion/carrot mix, then stir it together, cover. Other bag of broccoli should be in the microwave by now.
While the other bag of broccoli is cooking, add the whipping cream to the big pot with stock and butter. Turn heat to medium, bring to boil. Add the other bag of broccoli to the carrot/onion mix stir and cover. Let that cook down enough to be able to chop it up pretty good. Use your spatula to chop up the carrot/onion/broccoli mix, until you feel the broccoli is in smaller pieces. Add that to the whipping cream pot. Stir, add all 4 cups of cheddar cheese (I use sharp cheddar). Stir with a pinch of salt and pepper. Medium/low heat, covered. Let it simmer for 30 mins, while stirring every so often. Taste it before you serve it, you may have to add more salt to taste. Then serve! It will be incredibly HOT, so be careful! You can also serve it with Panera bread.
